Excellent pedals, very good quality, you can adjust the tension with a 2.5 allen key and you can choose the type of cleats you want to use. If I´m not mistaken, they come with medium-strength gray ones, the black ones are the stiffest, and the red ones are the least rigid. Very durable pedals. They come in pairs and arrive quickly. Obviously, depending on where you live, they will probably take less time to arrive in France. I ordered them from Chile and they arrived in 2 weeks. I hope I´ve clarified your doubt. I have such pedals and I have no problems with release, but I noticed that the ease of release is also influenced by the cleats. Previously I had Look Keo 0 and now I have 9 (red) and I feel the difference in the fastening and knee protection. The pedals fit with Shimano cleats, but I would recommend Look Keo with a lot of release - it should help. And one more thing, these are road pedals, so they will always be more difficult to release than, for example, similar MTB pedals (I have both models and I feel the difference in favor of the MTB).

I also had this problem. I switched to the red dishes. But it only really resolved itself when I placed the crossbars more effectively. The correct placement of the crossbars is very important. Mainly because it prevents knee problems. Also, in my opinion, Shimano pedals with yellow cleats are the easiest to clip in and out of shoes.
