If you're in need of particular Shimano caliper parts, I recommend that you contact your local bike shop, or the official Shimano website. Alternatively, you can also buy a used Dura Ace 9270 caliper for parts. Hope this gives you some options.

Yes, they can.I did just the same, leaving in place also the old Ultegra mechanical shifters. Everything is backwards compatible, regarding the brakes.
